This is a japanese cake named early summer. This cake was made for the tea ceremony held for foreign guests at Happouen in Tokyo. What do you think is important for teacakes served in a  tea ceremony ?

Teacakes in a tea room play a secondary  role as a rule. Tea is regarded as the main part, and tea cakes are considered not to damage the taste of the tea. The use of the ingredients which have a strong aroma should be avoided. Yuze(which is a slight citrus fragrance) or  something similar would be acceptable.It is also important to make tea cakes  that puts importance on a sense of the season.
